Soba Making Lesson
We took a Soba (Buckwheat noodle) making lesson in Yasaka Furusato Taikenmura.
We made Nihachi Soba （二八蕎麦）, by using 400g of Soba ko (soba powder), and 100g of flour. Nihachi soba got its name because 20% of the mixture is made of flour, and other 80% is made of soba powder. So Ni comes from 2 in the 20% and Hachi comes from 8 in the 80%. We also need 260g of water, which is 52% of the powder mixture.
The second step is where we roll the dough into a thin sheet, about 1.5cm thick.
Finally we cut the dough into long thin strips using a special knife and board.
To take Soba making lesson, you need to reserve in advance and the cost is 3000 yen for about 90 minutes.
